Thanksgiving was especially full of celebration this year. We celebrated my eldest son’s eleventh birthday. The days of rearing up toddlers are over for me and the entrance into the so-called preteens has already begun. I don’t fuss about the teen years. I am preparing my son to become a man. We often talk of honor and integrity these days. Some moments there is deep maturity and other moments I am thrust back into reality that he is still only eleven. He is one of my hero’s for sure and this mama heart melts when he embraces me and loves me well.
Thanksgiving was spoken and given throughout the day and we feasted without feeling yucky and too full. We partook of Vegan Shepherd’s Pie (I got it from RachaelLee on this blog, asparagus, cranberry sauce and for dessert we had Salted Caramel Pecan Pie Without Corn Syrup over here at The Spunky Coconut. We topped the pie with Trader Joe’s Soy Vanilla Ice Cream and Coconut Whipped Cream that the Minimalist Baker shared. We always use the least amount of sugar as possible and oh my, this was super duper yummy. I can’t wait to cuddle up with Honey tonight and enjoy the last slice of deliciousness!
We as humans offer up our praise to God on Thanksgiving day. We were created to be in relationship with a wonderfully giving God and we have much to be thankful for every day. Today we acknowledge the creation exalting the Creator even as this calf loves the giver of this milk and this place of protection she has been given.
